Sushi restaurants have been popping up all over the place, so great is the demand for the Japanese speciality. Making your own at home, though, is easier than you might think.
RAW at the Galway Radisson Blu is a top-notch sushi restaurant on the fourth floor, overlooking Galway Bay. Here, on the first Saturday of every month, head chef Hisashi Kumagai (Kuma), pictured, holds a sushi-making class. Get to know your norimaki from your nigiri in this fun, 90-minute class. You'll make a selection of dishes under Kuma's watchful eye, including how to use wooden sushi mats to create a perfect(ish) sushi roll. This one is particularly satisfying. Classes, 3pm-4.30pm, cost €25 including a glass of wine.
If you prefer Kuma to do the all hard work, there is a sushi and spa offer at the Radisson Blu, with one night's accommodation in one of its new bedrooms, buffet breakfast, a four-course set dinner at RAW, an Elemis facial in the Spirit One spa and use of the thermal suite and leisure centre for €165 per person.
