St Tola Ash is supreme champion Irish cheese

St Tola Ash, an organic goat's cheese made by Siobhan Ni Ghairbhith of Inagh Farmhouse Cheese in Co Clare, was named supreme champion at the Irish Cheese Awards today. The judging was done at Bloom garden festival in Dublin's Phoenix Park.

The fresh cheese is rolled in food grade ash, which the makers say “slows down the development and maturation of the cheese and after a few weeks of careful handling results in a smooth textured and full flavoured cheese”.

St Tola Ash also won the best Irish cheese accolade at the World Cheese Awards last November.

Inagh Farmhouse Cheese farm shop opened its doors last weekend and will be open for business seven days a week, 10am-5pm. It is also possible to book farm tours and visit the 220-strong goat herd on the 65-acre organic farm, by appointment. See st-tola.ie.
