Sir, – I just love Cian Flaherty’s insight into the redoubtable gur cake (An Irishman’s Diary, July 29th). Being a country lad of origin, I referred to this very digestible pastiche as Chester cake – until, that is, I lived in Dublin for some 25 years.

I was having a coffee break with a work colleague in a Dublin restaurant and asked for my usual Chester cake. Oh no, he informed me, that is gur cake. And so it came to pass.

From that good day to this I ask for gur cake.

By the way The Bread Basket in Ballinasloe, in my estimation, serve the best gur cake in the country and very generous slices too. Enjoy! – Yours, etc,
