Sir, - There is a rather unique tipping ceremony in a branch of La Boucherie (a nationwide chain of steak restaurants) in Argeles-sur-Mer, France. When customers settle their bill they can leave a tip in a bull shaped receptacle, and a bell is rung by the cashier, whereupon the entire restaurant shouts “merci”.

Very few clients leave without tipping. - Yours, etc,
